They say diamonds are a girl's best friend, but some would say they're in tough competition with chocolate. These days wedding cakes aren't just all fruit cake and marzipan, and can range from carrot and macadamia cakes, to rich ganache creations. Dark chocolate cake however is definitely one of our favourites, especially for winter, perhaps because it's supposedly “healthier”, or so we like to tell ourselves.

Firstly you have the option of a dark chocolate flavoured cake or a richer mousse cake. Combined with a rich white and milk chocolate icing, or a coloured frosting of your choice, this dense cake is simply divine and makes an eye-catching focus piece. Then there's the option of something lighter like a vanilla or whipped mousse cake decorated with dark chocolate frosting. Lastly we're loving cake designers' use of dark chocolate truffles and chocolate sheets – wrapped and arranged around the tiers, it makes for one highly indulgent chocolate tower.

When it comes to shapes and sizes, the options are virtually endless, starting with traditional tiered cakes which are still high on the priority list. The square and off-centre cakes are probably the two biggest tiered trends to hit the wedding industry this season, while dark chocolate cupcakes (especially those in laser cut paper cups) are still as coveted as ever before.

If you're not really much of a cake lover, why not opt for a dark chocolate fountain? Served with a variety of dipping treats such as strawberries and marshmallows guests will be in seventh heaven. Dark chocolate macaroon towers and cake pops are also very popular at the moment and easy to eat on the go, while steaming cups of dark hot chocolate makes the ideal cake alternative for a winter wedding.

Dark chocolate pairs incredibly well with a sweet port or dessert wine, so consider turning dessert into a wine and chocolate cake pairing to keep things interesting. Alternatively, serve your cake with a scoop of rich and creamy vanilla ice cream and a handful of fresh berries.
